These knives are great. They’ve stayed sharp for over two years since I bought them. When we trade houses with a friend in California (we live in London) we take them with us as our friends’ kitchen is ill equipped. I first heard about these knives from Nobu Matsuhisa, the famous and brilliant chef. It was our great pleasure to be one of his guinea pigs at his restaurant Matsuhisa, the predecessor of Nobu, on La Cienega Blvd. in Los Angeles in the early 80s.
